Lead Line Cook

JOB SUMMARY: The Lead Line Cook oversees back of the house food establishment by performing the following duties personally or through a subordinate supervisor. Directs, coordinates and participates with Line Cooks in preparation of, cooking, wrapping or packing types of food served or prepared by establishment. Maintain inventory of all supplies. Must possess excellent organizational skills and be detail-orientated, and able to work in a fast-paced environment, make sound decisions and familiar with current practices and standards.

SUPERVISORY RESPONSIBILITIES: Directly supervises 5-30 non-supervisory associates. Conduct Supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include training associates; planning, assigning, and directing work; rewarding and disciplining associates; addressing complaints and resolving problems.

EDUCATION and/or EXPERIENCE: Associates degree (A.A.) or equivalent from two-year College or technical school; or six months related experience in full service restaurant and/or training; or equivalent combination of education and experience. Knowledge of sanitation requirements as set by the Casino, New York State and FDA, knowledge and ability to use all kitchen tools and equipment. Ability to identify all products used in kitchen operation; recognize spoiled or questionable products, and to successfully complete Line Cook tests.
